Hot Tuna Sandwich


I made this the other day and it was delicious. I like to use the tuna fillets in olive oil but any canned tuna will do fine. Mix in a little mayo and Mrs. Dash seasoning blend (I like extra spicy). You can put some celery and/or fresh herbs if you like - whatever. Spread on a good rye bread and top with some slices of Cabot's habanero cheddar cheese (or whatever) and put it under the broiler open-faced and cheese up. When the cheese has melted don't take it out yet, let it brown and even get a little crunchy. Yum.
